Sfakià Pie with Olive Oil Dough 



For the Dough:
500 gr. all purpose flour
250 gr.lukewarm water
45 gr olive oil
45 gr white wine vinegar or tsikoudia
1 tsp salt

For the Filling:
400 gr soft white cheese as soft mizithra or ricotta.
Good quality honey

For the Dough:
Place all the ingredients in your mixer’s bowl and kneed with the hook for 5 minutes.
Let the dough rest for half an hour.
Divide the dough in 6 equal little balls.

Open each ball of dough in a round disk about .5cm thick, then using a small plate cut around in a circle to form one side of a pie. Spread a thin layer of your cheese mix over the circle of pastry then make a top using the same method, putting the top on the pie and pressing around the edges with a fork to close the pie. 
Place each pie in a non-stick pan, and cook for around two minutes per side in medium low heat.

Serve warm with honey drizzled over them.
