RADICCHIO WITH ANCHOVIES AND BALSAMIC

2  anchovies in oil, drained

1 garlic clove, crushed

2  tablespoons balsamic vinegar 

5  tablespoons extra-virgin olive oil

 Ground black pepper

1 head of radicchio torn into leaves 

 

This recipe is super fast, you can use any type of radicchio for it too. Firstly, finely chop up your anchovy, and garlic too. Mix them together in with your olive oil so that it is a loose paste. Get a frying pan quite hot and put in your garlic and anchovy mix quickly followed by the radicchio. With tongs toss the radicchio through the oil, making sure it all gets in contact with the heat of the pan. Take off the heat once wilted. Season with salt pepper and vinegar. This would be great with something fresh next to it, like a plate of cut tomatoes, or fresh basil stirred through.
